Foraging for Japanese Knotweed
The theme ingredient at the North Carolina Wild Foods Weekend this year was Japanese knotweed. Had a fantastic time hanging out with fellow expert foragers including Sam Thayer and Mike Krebill.
Here’s a short video I made about harvesting and using Japanese knotweed. Let me know about any especially tasty recipes you make with this highly invasive wild edible.
NC friends, hope to see you again next year!

“Leda Meredith is, in my opinion, the Foraging Goddess, and the next best thing to this book would be to share a field expedition with her! I highly recommend The Forager’s Feast to anyone who has a love of the wild foods.” - Amazon review by Susan C.
